Does anyone know an easy way of changing what command is called when
someone double-clicks on an object (ie. DDATTE instead of EATTEDIT)?

    Bill -

Why not post the answer for all the others who will read your
question in the months/years to come?

The answer I got off of Autodesk KnowledgeBase

Use the "Undefine" command to get rid of "EATTEDIT"

then you can either add an alias to your Acad.pgp file
    EATTEDIT, *DDATTE

or you can add this to your acad.lsp
    (defun c:eattedit () (command "ddatte"))
