I'm considering changing our system over from using CTB's to STB's. My
question is this, what is involved in specifying lines that will plot in
color when using the STB? Most of the data will remain B&W but I need the
ability to specify certain entites as color.

    Thanks for any input!

Can you change the layer to "Normal" on certain sheets, or will this change
affect all drawings containing this layer as an xref?

This may just be personal preference but I think I would avoid using
"Normal". I tend to avoid default and automatically assigned settings as
much as possible because I am never quite sure what I will end up getting.
Why not just create a "Colour" plotstyle and have it set to use the object
colour. Then assign "Colour" as the plotstyle for the layers you want
    printed in colour.
BTW, once you get used to using STB's you will never go back to CTB's.

Perhaps someone could take this opportunity to give a quick "pro's and con's" of the stb vs. ctb use.

We have always used ctb's in this firm and never had any problems. Why change?
